Myths and truths about nutrition: does milk inflame?

More than milk, we need to talk about caseins, the proteins contained in milk and milk derivatives.

Caseins have a potential inflammatory effect on the intestine, especially caseins from cow's milk; those contained in goat's milk are less inflammatory.

So we don't have to eat dairy products anymore? No! As always, the situation of each individual must be assessed.

In people suffering from symptoms related to severe intestinal inflammation, it can be very helpful to set up a temporary diet with exclusion of all dairy products. Subsequently, aged Parmesan cheese +36 months and a few goat's milk products can be introduced.
